{"id":996,"date":"2013-12-10T10:11:25","date_gmt":"2013-12-10T08:11:25","guid":{"rendered":"http:\/\/www.jamonlovers.es\/?p=996"},"modified":"2013-12-10T10:11:25","modified_gmt":"2013-12-10T08:11:25","slug":"mazapan-de-toledo","status":"publish","type":"post","link":"https:\/\/new.jamonlovers.es\/?p=996","title":{"rendered":"Mazap\u00e1n de Toledo"},"content":{"rendered":"<p>En el reglamento de elaboraci\u00f3n del <strong>mazap\u00e1n de Toledo<\/strong> se lee: \u00abes la masa fina y compacta resultante de la mezcla o amasado de almendras crudas, peladas y molidas, con az\u00facar en sus distintas clases, que se emplea como base de una variada serie de dulces t\u00edpicos toledanos\u00bb. \u00a0As\u00ed ha sido desde hace muchos siglos\u2026 aun cuando no se sepa muy bien cuantos. Y es que, aunque el uso del az\u00facar, en sustituci\u00f3n de la miel, no se expandi\u00f3 por Europa hasta el siglo XVI, si se sabe que los cristianos del siglo V hac\u00edan un producto muy similar para celebrar la Pascua\u2026 aunque en este caso empleando miel en lugar del az\u00facar que habr\u00eda de llegar, desde Am\u00e9rica, siglos despu\u00e9s.<\/p>\n<p>Con respecto al lugar en el que, por vez primera, un confitero elaboro algo similar al mazap\u00e1n de Toledo que hoy conocemos, existen dos versiones distintas. Para los unos, todo comenz\u00f3 en Italia, en concreto de Venecia. All\u00ed, el Marcipane o Pan de San Marcos, era un dulce t\u00edpico utilizado en las fiestas del patrono de la ciudad. Tambi\u00e9n hay quien hace art\u00edfice de la gestaci\u00f3n del producto a un panadero alem\u00e1n de L\u00fcbeck, quien, all\u00e1 por el siglo XIV, habr\u00eda tratado de paliar con el producto la falta de pan ocasionada por una hambruna. Sin embargo, la versi\u00f3n m\u00e1s aceptada (al menos en Toledo), nos remontar\u00eda hasta el siglo VIII. O sea, durante la dominaci\u00f3n \u00e1rabe, y asemeja la palabra mazap\u00e1n con el t\u00e9rmino \u00e1rabe \u201cmautha-ban\u201d, empleado para designar la figura de un califa sentado, porque al parecer los \u00e1rabes, una vez hecha la pasta, imprim\u00edan en ella el relieve de una moneda con la efigie de un rey sentado.<\/p>\n<p>Enlazando con la teor\u00eda del origen hispano musulm\u00e1n, surge la leyenda\u2026 una leyenda que relata que habr\u00edan sido las monjas del convento de San Clemente quienes inventaron el mazap\u00e1n de Toledo, cuando la ciudad se hallaba sitiada por los \u00e1rabes y hab\u00eda gran necesidad de alimentos (otra hambruna), por lo que con almendra y az\u00facar machacado con una maza hicieron un \u201cpan de maza\u201d. Sea como fuere o fuera, lo cierto es que la primera versi\u00f3n del mazap\u00e1n toledano data de 1525\u2026 y as\u00ed hasta hoy.<\/p>\n<p><b>Elaboraci\u00f3n y regulaci\u00f3n<\/b><\/p>\n<p><b><\/b>El mazap\u00e1n tiene dos ingredientes b\u00e1sicos que ya hemos mencionado: las almendras y el az\u00facar. Este delicioso fruto seco debe representar el 50% del peso total del dulce. Por su parte, el az\u00facar utilizado puede proceder de distintos or\u00edgenes (az\u00facar de ca\u00f1a, de remolacha, miel, glucosa, sacarosa, etc).<\/p>\n<p>Seg\u00fan establece el Consejo Regulador del mazap\u00e1n de Toledo, \u00e9l horneado es una fase esencial para que el mazap\u00e1n sea de calidad.
