Esta ma\u00f1ana os hemos contado qu\u00e9 jamones y cu\u00e1les son las <a href=\"http:\/\/www.jamonlovers.es\/mundo-jamon-lovers\/concurso-al-mejor-jamon-de-bellota-100-iberico-dop-los-pedroches\/\">empresas<\/a> que participan. Ahora queremos presentarte a las<strong> personas<\/strong> que forman parte de este <strong>jurado profesional<\/strong> y que ser\u00e1n, las responsables en elegir el mejor Jam\u00f3n de Bellota 100% Ib\u00e9rico con Denominaci\u00f3n de Origen Protegida Los Pedroches 2017.<\/p>\n<p><strong>Rafael Jordano Salinas: <\/strong>Licenciado y Doctor en Veterinaria por la Universidad de C\u00f3rdoba que hizo su post-doctoral en el Institut Pasteur de Lille (Francia). Catedr\u00e1tico de <strong>Universidad de Nutrici\u00f3n y Bromatolog\u00eda<\/strong> de la Facultad de Veterinaria de la Universidad de C\u00f3rdoba y Responsable del Grupo de <strong>Investigaci\u00f3n<\/strong> Microbiolog\u00eda de <strong>Alimentos<\/strong>. Miembro del Comit\u00e9 Editorial de la revista <strong>Journal of Food Protection<\/strong> (EEUU) y nombrado en 2015 <strong>Director de la C\u00e1tedra de Gastronom\u00eda de Andaluc\u00eda<\/strong>. Actualmente es Coordinador General de Campus de la UCO con rango de Vicerrector.<\/p>\n<p><strong>Jos\u00e9 Fernando Buitr\u00f3n: <\/strong>Ingeniero industrial y <strong>Sumiller Profesional por la Escuela Espa\u00f1ola de Cata<\/strong>. Actualmente es el CEO y fundador de <strong>El Emparrao<\/strong>, blog especializado en el mundo del <strong>vino<\/strong>. Gran amante de la gastronom\u00eda y <strong>catador profesional<\/strong>.<\/p>\n<p><strong>Jos\u00e9 Ram\u00f3n Godoy: <\/strong>Licenciado en veterinaria y con una <strong>trayectoria<\/strong> inmersa en el mundo del <strong>jam\u00f3n<\/strong>. Secretario General en la <strong>Fundaci\u00f3n del Jam\u00f3n Serrano<\/strong> y Responsable de Internalizaci\u00f3n de <strong>Interporc<\/strong> (Interprofesional del cerdo de capa blanca). Actualmente es Coordinador de la Internacionalizaci\u00f3n en Provacuno (Interprofesional de la carne de Vacuno en Espa\u00f1a).<\/p>\n<p><strong>Lourdes S\u00e1nchez L\u00f3pez:<\/strong> Ingeniero Agr\u00f3nomo por la Universidad de C\u00f3rdoba tiene adem\u00e1s un M\u00e1ster en Dise\u00f1o y Gesti\u00f3n de Planta Agroindustriales.Actualmente es <strong>Responsable de Calidad del Centro Tecnol\u00f3gico CICAP<\/strong> y Co-responsable del Laboratorio de<strong> An\u00e1lisis Sensorial<\/strong> del mismo centro. Forma parte <strong>del panel de cata de Cicap<\/strong> desde sus inicios y tiene una amplia experiencia en an\u00e1lisis instrumental y sensorial de productos del <strong>cerdo Ib\u00e9rico<\/strong>.<\/p>\n<p><strong>Jes\u00fas Serrano:<\/strong> Ingeniero T\u00e9cnico Industrial y <strong>experto en an\u00e1lisis sensorial del Jam\u00f3n<\/strong>. Cortador profesional y Fundador y Director T\u00e9cnico de la <strong>Escuela Internacional de Cortadores de Jam\u00f3n<\/strong>. Autor de los libros \u201cConoce el jam\u00f3n y su Corte\u201d y \u201cC\u00f3mo Vender el Jam\u00f3n\u201d. Actualmente acaba de lanzar un proyecto dedicado en exclusiva al <strong>An\u00e1lisis Sensorial del Jam\u00f3n<\/strong>, <a href=\"http:\/\/www.jamonlovers.es\/mundo-jamon-lovers\/sensojamon-el-nuevo-espacio-sensorial-del-jamon\/\">SensoJam\u00f3n<\/a>.<\/p>\n<p>Lo cierto es que el jurado impone, muy orientado al mundo de la <strong>cata profesional<\/strong> y relacionado con el <strong>jam\u00f3n<\/strong>.
