Ha congregado a\u00a0m\u00e1s de <strong>300 profesionales del jam\u00f3n<\/strong> procedentes de pa\u00edses como\u00a0M\u00e9xico, China, Jap\u00f3n, Francia, Alemania, Portugal, Italia y Espa\u00f1a.<\/p>\n<p>A lo largo de estos tres d\u00edas, y organizado en <strong>12 sesiones tem\u00e1ticas y 25 ponencias<\/strong>, el Congreso ha analizado la <strong>situaci\u00f3n del sector,<\/strong> las mejoras en <strong>gen\u00e9tica y alimentaci\u00f3n<\/strong> del cerdo blanco e ib\u00e9rico, la <strong>innovaci\u00f3n<\/strong> y avances en el proceso de elaboraci\u00f3n de jamones curados, la <strong>seguridad alimentaria<\/strong> y tecnol\u00f3gica, las nuevas <strong>aportaciones nutricionales<\/strong> de los jamones de cerdo blanco e ib\u00e9rico, el jam\u00f3n curado en los <strong>mercados exteriores<\/strong>, los aspectos de la <strong>calidad del jam\u00f3n curado<\/strong>, la <strong>problem\u00e1tica de la materia prima<\/strong> desde el punto de vista del sector, la <strong>distribuci\u00f3n<\/strong> y el jam\u00f3n curado e ib\u00e9rico y el <strong>marketing<\/strong> aplicado al jam\u00f3n.<\/p>\n<p>Algunas de las <strong>conclusiones<\/strong> de este <strong>IX Congreso Mundial del Jam\u00f3n Curado<\/strong> son:<\/p>\n<h4>En el plano empresarial:<\/h4>\n<ul>\n<li><strong>Impulsar la exportaci\u00f3n<\/strong> de productos c\u00e1rnicos de <strong>valor a\u00f1adido<\/strong>, como son los jamones curados, eliminando las trabas al comercio y negociando la inclusi\u00f3n de empresas jamoneras en las listas de exportadores autorizados a mercados de inter\u00e9s estrat\u00e9gico para el sector.<\/li>\n<li>Las <strong>exportaciones a pa\u00edses terceros<\/strong> tienen una <strong>importancia estrat\u00e9gica<\/strong> para el sector del jam\u00f3n curado, que necesita encontrar mercados complementarios a los ya saturados de la UE.<\/li>\n<li>Conseguir una<strong> protecci\u00f3n adecuada<\/strong> para estos productos tan emblem\u00e1ticos de nuestra gastronom\u00eda.<\/li>\n<li>Poner en marcha <strong>proyectos de I+D+i<\/strong> dirigidos a resolver cuestiones tecnol\u00f3gicas de importancia para el sector.<\/li>\n<li><strong>Vigilar y atajar pol\u00edticas comerciales desleales.<\/strong><\/li>\n<\/ul>\n<h4 class=\"Standard\"><span style=\"color: black;\">En el plano t\u00e9cnico:<\/span><\/h4>\n<ul>\n<li>Formaci\u00f3n del <strong>color en productos sin nitrificaci\u00f3n<\/strong>: la <strong>Zn-Protoporfilina<\/strong> es el principal <strong>responsable del color en jamones sin nitrificantes<\/strong> cuya formaci\u00f3n se ve favorecida por el enzima ferroquelatasa. La formaci\u00f3n de este pigmento aumenta con el tiempo, y la temperatura y la adici\u00f3n de ascorbato y disminuye por la adici\u00f3n de sales nitrificantes.<\/li>\n<li><strong>Cultivos microbianos para la elaboraci\u00f3n del jam\u00f3n<\/strong>: La adici\u00f3n de cultivos iniciadores es \u00fatil para <strong>reducir el crecimiento de listeria monocytogenes<\/strong> en jamones de r\u00e1pida maduraci\u00f3n y para controlar el ecosistema microbiano en las salmueras utilizadas para la salaz\u00f3n de los \u201cjamones de la Selva Negra\u201d.<\/li>\n<li><strong>Gesti\u00f3n eficaz de residuos salinos:<\/strong> La gesti\u00f3n de los residuos salinos supone un <strong>problema medioambiental<\/strong> y un coste para las empresas elaboradoras de jam\u00f3n. La evaporaci\u00f3n del agua de las salmueras mediante bomba de calor y\/o reutilizaci\u00f3n de energ\u00eda sobrante constituye una alternativa a los sistemas actuales existentes (diluci\u00f3n, gesti\u00f3n por compa\u00f1\u00edas especializadas\u2026).<\/li>\n<\/ul>\n<h4 class=\"Standard\"><span style=\"color: black;\">En el plano nutricional y de salud:<\/span><\/h4>\n<ul>\n<li>Nuevas <strong>aportaciones a los aspectos nutricionales<\/strong> de los jamones blanco e ib\u00e9rico.<\/li>\n<li>El jam\u00f3n curado contiene numerosos <strong>p\u00e9ptidos bioactivos<\/strong> que contribuyen a una mejor <strong>salud cardiovascular<\/strong>.<\/li>\n<li>Los <strong>nitritos residuales del jam\u00f3n<\/strong> curado son fuente de <strong>\u00f3xido n\u00edtrico<\/strong>, factor fundamental para la <strong>protecci\u00f3n cardiovascular<\/strong>.<\/li>\n<li>El <strong>consumo de jam\u00f3n<\/strong> curado de forma <strong>moderada<\/strong> (en una dieta equilibrada) contribuye a una <strong>vida saludable y feliz<\/strong>.<\/li>\n<\/ul>\n<p>Tras la lectura de las conclusiones del Congreso, el Comit\u00e9 organizador ha pasado el testigo de la pr\u00f3xima edici\u00f3n, que se celebrar\u00e1 en<strong> 2019 en Madrid<\/strong> (Ifema, sede de Meat attaction).<\/p>\n<p>A lo largo de estos d\u00edas ir\u00e9 lanzando algunos post m\u00e1s espec\u00edficos sobre las ponencias que me han parecido m\u00e1s interesantes.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Durante 3 d\u00edas Toledo ha acogido el IX Congreso Mundial del Jam\u00f3n\u00a0Curado.
