Celebrado del 23 al 25 de septiembre en el espectacular Vall\u00e9e de Joux, el certamen ha contado con un total de <strong>777 tipos de quesos suizos<\/strong>, demostrando la gran variedad de producci\u00f3n quesera del pa\u00eds.<\/p>\n<div class=\"page\" title=\"Page 1\">\n<div class=\"layoutArea\">\n<div class=\"column\">\n<p>El ganador, Le Gruy\u00e8re d\u2019alpage AOP de <strong>Jean-Claude Pittet<\/strong>, se elabora en su <strong>queser\u00eda tradicional<\/strong>, situada en el mismo <strong>Vall\u00e9e de Joux<\/strong> d\u00f3nde tuvo lugar el certamen. Se trata de un queso <strong>Gruy\u00e8re d\u2019alpage<\/strong>, de alta monta\u00f1a. Como otros quesos d\u2019alpage, \u00e9ste se elabora \u00fanicamente en los <strong>meses de verano<\/strong>, desde finales de mayo hasta principios de octubre, en caser\u00edos situados entre 1.000 y 2.000 metros de altitud.<\/p>\n<div class=\"page\" title=\"Page 1\">\n<div class=\"layoutArea\">\n<div class=\"column\">\n<p>Otros quesos suizos galardonados en sus variedades fueron el <strong>T\u00eate de Moine AOP<\/strong> de Joseph Spielhofer, el <strong>Emmentaler AOP<\/strong> de Hanspeter M\u00fcller, <strong>Le Gruy\u00e8re AOP<\/strong> de Pierre Buchillier el <strong>Sbrinz AOP<\/strong> de Franz Hegglin y el <strong>Appenzeller\u00ae<\/strong> de Christian Fankhauser.<\/p>\n<p><a href=\"http:\/\/www.jamonlovers.es\/\/wp-content\/uploads\/2016\/09\/swiss-cheese-awards.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-5965 size-medium\" src=\"http:\/\/www.jamonlovers.es\/\/wp-content\/uploads\/2016\/09\/swiss-cheese-awards-300x200.jpg\" alt=\"Swiss Cheese Awards\" width=\"300\" height=\"200\" \/><\/a>El jurado internacional, compuesto por m\u00e1s de <strong>100 profesionales<\/strong> de la industria lechera y de la gastronom\u00eda, consumidores y representantes de medios de comunicaci\u00f3n, puntu\u00f3 los 777 quesos inscritos que compet\u00edan por el t\u00edtulo en <strong>28 categor\u00edas<\/strong> diferentes.<\/p>\n<div class=\"page\" title=\"Page 2\">\n<div class=\"layoutArea\">\n<div class=\"column\">\n<p>Los Quesos de Suiza son famosos en todo el mundo gracias al <strong>cuidado y a las caracter\u00edsticas artesanales<\/strong> con las que se elaboran. El <strong>pastoreo<\/strong> de las vacas es <strong>obligatorio<\/strong> en Suiza, pa\u00eds donde est\u00e1 totalmente <strong>prohibido<\/strong> el uso de hormonas y antibi\u00f3ticos en la crianza de ganado y donde ning\u00fan queso puede fabricarse con aditivos qu\u00edmicos.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-5964 size-medium alignright\" src=\"http:\/\/www.jamonlovers.es\/\/wp-content\/uploads\/2016\/09\/gruyere-dalpage-AOP-300x200.jpg\" alt=\"Gruy\u00e8re d\u2019alpage AOP\" width=\"300\" height=\"200\" \/>Para elaborar un<strong> queso suizo<\/strong> se utiliza casi el <strong>doble de leche<\/strong> que para fabricar un queso de producci\u00f3n industrial. Las queser\u00edas reciben <strong>dos veces al d\u00eda<\/strong> la leche reci\u00e9n orde\u00f1ada para garantizar la elaboraci\u00f3n de un producto fresco y sano. El uso de leche cruda, no pasteurizada, posibilita un sabor m\u00e1s intenso y potencia los aromas derivados del pasto y forrajes.<\/p>\n<p>La rigurosa normativa, sometida a un <strong>estricto control<\/strong> por parte de la Oficina Federal de Agricultura de Suiza, <strong>garantiza<\/strong> la elaboraci\u00f3n tradicional del producto <strong>desde el origen de la cadena hasta el final<\/strong>, momento en el que un tasador certifica que el queso tiene la suficiente calidad para llevar el <strong>sello<\/strong> de su regi\u00f3n quesera.
