El <strong>cachopo<\/strong>, como todos sab\u00e9is es uno de los platos m\u00e1s conocidos de la gastronom\u00eda asturiana. Normalmente suelen ser <strong>dos filetes de ternera<\/strong> entre los que se mete <strong>jam\u00f3n y queso<\/strong> y posteriormente se empanan y fr\u00eden. Puedes encontrarlos tambi\u00e9n rellenos de <strong>cecina, queso cabrales, setas<\/strong>&#8230;hay una gran variedad. Una de mis vistas fue al <strong>Llar de Viri<\/strong> casa de comidas liderada por Viri y que cuenta con varios premios entre ellos el que consiguieron en 2013 como <strong>\u00abLa Mejor Fabada del Mundo\u00bb<\/strong>. La cultura gastron\u00f3mica del Llar de Viri esta ligada a su actividad en el<strong> Club de Guisanderas de Asturias<\/strong> as\u00ed como el movimiento internacional <strong>Slow Food y KM0.<\/strong><\/p>\n<p>Adem\u00e1s de por supuesto, probar esa estupenda Fabada, el delicioso pote de casta\u00f1as y el pitu caleya, nos decidimos a probar un <strong>cachopo sin carne, elaborado directamente con setas<\/strong>. El resultado es fant\u00e1stico y hoy quiero compartir con vosotros esa receta.<\/p>\n<h4>Ingredientes para Cachopo:<\/h4>\n<p>\u2013 8 setas grandes.<\/p>\n<p>\u2013 4 lonchas de <a href=\"http:\/\/www.jamonlovers.es\">jam\u00f3n ib\u00e9rico<\/a>.<\/p>\n<p>\u2013 4 lonchas de queso (manchego o azul, al gusto).<\/p>\n<p>\u2013 1 Huevo.<\/p>\n<p>\u2013 Harina.<\/p>\n<h4>Ingredientes para Salsa:<\/h4>\n<p>\u2013 1 diente de ajo.<\/p>\n<p>\u2013 2 cebollas.<\/p>\n<p>\u2013 4 lonchas de jam\u00f3n ib\u00e9rico.<\/p>\n<p>\u2013 250 ml. de nata l\u00edquida.<\/p>\n<p>\u2013 Sal y pimienta al gusto.<\/p>\n<h4>Elaboraci\u00f3n:<\/h4>\n<p>Comenzaremos montando los cachopos, para ello <strong>colocaremos una seta<\/strong> en un plato y pondremos encima una loncha de <strong>jam\u00f3n ib\u00e9rico<\/strong>, otra de <strong>queso<\/strong> y finalmente otra <strong>seta<\/strong> encima. Repetiremos esta acci\u00f3n con todas las setas. Una vez montados todos, <strong>rebozaremos cada cachopo<\/strong> con harina y huevo y los colocaremos sobre una fuente v\u00e1lida para hornear.<\/p>\n<p>A continuaci\u00f3n elaboraremos la salsa. Ponemos aceite de oliva a calentar sobre el fondo de una olla. <strong>Rehogamos<\/strong> la <strong>cebolla y el ajo<\/strong> previamente picado y por \u00faltimo a\u00f1adimos el <strong><a href=\"http:\/\/www.jamonlovers.es\/category\/jamon\/\">jam\u00f3n<\/a> ib\u00e9rico<\/strong> que ten\u00edamos reservado para la salsa. Moveremos hasta que m\u00e1s o menos est\u00e9 todo dorado. Por \u00faltimo a\u00f1adimos la <strong>nata, sal y pimienta<\/strong> al gusto y dejamos que vaya espesando.<\/p>\n<p>Pasamos la salsa por la <strong>batidora<\/strong> para que est\u00e9 <strong>homog\u00e9nea<\/strong> y la echamos por encima de los cachopos que hab\u00edamos colocado en la fuente.<\/p>\n<p>Calentamos el horno a <strong>180\u00ba<\/strong> e introducimos la fuente durante aproximadamente<strong> 10 minutos<\/strong>, los cachopos tienen que dorarse, as\u00ed que cuando veamos que est\u00e1n <strong>dorados<\/strong> podremos sacar la fuente.
