Tener un buen <a href=\"http:\/\/www.jamonlovers.es\/mundo-cortador\/cuchillos-para-cortar-un-jamon-por-ivan-ron\/\">cuchillo jamonero<\/a>, bien afilado, resulta b\u00e1sico si lo que se pretende es conseguir unas lonchas de <strong>jam\u00f3n ib\u00e9rico<\/strong> en las que descubrir todos los sabores y matices del manjar. <!--more-->Y es que una loncha fina, seg\u00fan las opiniones de todos los expertos, permite un aroma y un paso por el paladar que quedar\u00e1n ocultos en una loncha demasiado gruesa. Seg\u00fan diversos estudios y encuestas, entre los problemas m\u00e1s frecuentes con los que suele tener que enfrentarse un principiante a la hora de <strong>cortar unas lonchas de <a href=\"http:\/\/www.jamonlovers.es\">jam\u00f3n<\/a><\/strong>, destacan cortar lonchas demasiado gruesas (83%), seguido por desconocer c\u00f3mo cortar cuando se llega al hueso (43%), no saber c\u00f3mo empezar a cortar el pernil (18%) y desconocer qu\u00e9 hacer para que no se seque (9%).<\/p>\n<p>Vayamos por partes. Lo primero, antes de cortar, ser\u00e1 <a title=\"V\u00eddeo c\u00f3mo afilar cuchillo jamonero\" href=\"http:\/\/www.youtube.com\/watch?v=zBxU1Qnuvwk\" target=\"_blank\" rel=\"noopener\">afilar el cuchillo jamonero<\/a>\u2026 un cuchillo jamonero que, hecho de acero inoxidable, ser\u00e1 duradero y flexible\u2026 pero, tambi\u00e9n, instrumento que perder\u00e1 su filo con much\u00edsima facilidad. Esa misma operaci\u00f3n se realizar\u00e1 por la otra cara del cuchillo y as\u00ed, sucesivamente, hasta que tengamos el instrumento afilado. No hay que olvidar, bajo ning\u00fan concepto, levantar la hoja de la chaira una vez que se ha terminado el recorrido hacia atr\u00e1s. En ese momento, habr\u00e1 que volver el cuchillo a la posici\u00f3n de inicio y volver a empezar.<\/p>\n<p>Con respecto a la <strong>inclinaci\u00f3n<\/strong> que ha de darse a la <strong>hoja del cuchillo<\/strong> durante el afilado, est\u00e1 deber\u00e1 de ser de unos 20\u00ba. Por lo que alude a los movimientos de afilado, estos habr\u00e1n de hacerse de adelante hacia atr\u00e1s \u2013y no contra el filo-, levantando la hoja, una vez que se ha terminado el recorrido hacia atr\u00e1s, y volviendo a la posici\u00f3n de inicio. Tambi\u00e9n ser\u00eda importante haber mantenido la chaira en remojo, al menos, un par de horas antes de ponerse a afilar. Luego, al acabar el afilado, ser\u00eda conveniente <strong>pasarle un trapo al cuchillo<\/strong>. De esta forma, se eliminar\u00e1 un <strong>polvo met\u00e1lico<\/strong> que podr\u00eda darle un sabor y color extra\u00f1o a las lonchas.<\/p>\n<p>Te recordamos que la chaira lo que hace es asentar el filo para cortar mejor, sin embargo, si prefieres llevar a cabo un afilado o <strong>vaciado del cuchillo de forma profesional<\/strong>, existen cuchiller\u00edas que te lo afilan y vac\u00edan por unos 10 euros.
