{"id":299,"date":"2013-09-02T18:19:29","date_gmt":"2013-09-02T16:19:29","guid":{"rendered":"http:\/\/www.jamonlovers.es\/?p=299"},"modified":"2013-09-02T18:19:29","modified_gmt":"2013-09-02T16:19:29","slug":"chuleton-de-buey","status":"publish","type":"post","link":"https:\/\/new.jamonlovers.es\/?p=299","title":{"rendered":"El chulet\u00f3n de buey"},"content":{"rendered":"<p>Los <strong>amantes de la carne<\/strong> en Espa\u00f1a seguro que no son capaces de encontrar un mejor manjar, que llevarse a la boca, que un buen <strong>chulet\u00f3n<\/strong> cortado de la carne del macho bovino castrado: el buey. <!--more-->En los asadores \u2013sobre todo en los vascos, quiz\u00e1s no tanto en los castellanos- no se podr\u00e1 encontrar un <strong>corte de carne con un sabor, jugosidad y valor nutricional tan demandado<\/strong>. Claro que encontrarlo no es f\u00e1cil. Y es que, de los 2,5 millones de cabezas de vacuno que se sacrifican al a\u00f1o en Espa\u00f1a, tan s\u00f3lo una \u00ednfima parte son <strong>bueyes<\/strong>.<\/p>\n<p>Los criadores de buey para carne, lo que buscan son machos adultos de lomo grande a los que, adem\u00e1s de castrar, a veces, incluso, se les quitan los cuernos. A partir de este momento, comienza el proceso de cebado del animal, un proceso que puede llegar a prolongarse hasta en m\u00e1s de tres a\u00f1os. La alimentaci\u00f3n diaria del animal consistir\u00e1 en <strong>pasto natural, forraje<\/strong> y unos 12 kilos de ma\u00edz y cebada.<\/p>\n<p>Cuando el <strong>buey<\/strong> se estresa (y tambi\u00e9n les sucede a otros animales) su piel segrega una sustancia que acaba siendo absorbida por el m\u00fasculo\u2026 lo que, evidentemente, modifica el sabor final de la carne. A fin de que esto no suceda, las explotaciones especializadas en su crianza tratan de facilitar al animal un ambiente de relajaci\u00f3n. Hay, incluso, instalaciones equipadas con hilo musical camas biodegradables, cepillos de automasaje y dieta a base de vino, muesli y cereales al vapor.<\/p>\n<p>El resultado de todo este <strong>largo proceso de crianza<\/strong> es un producto con un color rojo y una consistencia superior a otras carnes vacunas como el a\u00f1ojo, la ternera o el novillo. La carne de buey es muy rica en prote\u00ednas y presenta un considerable aporte en vitamina B12, amino\u00e1cidos esenciales y sales como el potasio, el f\u00f3sforo o el magnesio. Sin embargo, para disfrutar en plenitud de todas estas particularidades, resulta fundamental saber practicar el corte: debe realizarse siempre de forma <strong>perpendicular a las fibras musculares<\/strong>.<\/p>\n<p>A la hora de comprar un filete de buey, y si se quiere estar seguro de que se trata de de carne de buena calidad, conviene fijarse en que aquel muestre un rojo vivo en el momento de realizar el corte.<\/p>\n<p>En el norte de Espa\u00f1a se cr\u00edan muy buena <strong>carne de buey<\/strong>.
