Hac\u00eda referencia a un m\u00e9todo de curaci\u00f3n y un proceso de ahumado hecho en las zonas rurales de <strong>Tennessee, Virginia, Georgia, Kentucky y otros estados del sur<\/strong>. El Jam\u00f3n de Virginia es un jam\u00f3n producido en Virginia; pero hoy en d\u00eda el \u00abestilo Virginia\u00bb se refiere a un estilo de preparar el jam\u00f3n, no una denominaci\u00f3n geogr\u00e1fica.<\/p>\n<p>La alimentaci\u00f3n habitual de los cerdos es actualmente el <strong>ma\u00edz,<\/strong> pero hasta los a\u00f1os 60 eran los <strong>cacahuetes<\/strong>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/www.jamonlovers.es\/\/wp-content\/uploads\/2013\/06\/country-ham.png\" alt=\"Country Ham\" width=\"575\" height=\"267\" \/><\/p>\n<p>El sabor es particularmente <strong>salado<\/strong>, debido a que la salaz\u00f3n dura unos <strong>40 d\u00edas<\/strong> (a temperaturas muy bajas, de<strong> 3 \u00baC o 4 \u00baC<\/strong>). En algunas ocasiones, determinados productores <strong>mezclan la sal con az\u00facar<\/strong> para endulzarlo y ablandarlo. Tambi\u00e9n se le a\u00f1ade <strong>nitrato pot\u00e1sico<\/strong> para darle un color m\u00e1s vivo a la carne, a la vez que act\u00faa como <strong>conservante<\/strong>.<\/p>\n<p>Pasado este tiempo se le deja madurar un <strong>m\u00ednimo de 25 d\u00edas<\/strong> a unos <strong>25 \u00baC<\/strong> y con una humedad relativa del 60%.
