{"id":2795,"date":"2013-06-05T10:31:57","date_gmt":"2013-06-05T08:31:57","guid":{"rendered":"http:\/\/www.jamonlovers.es\/?p=2795"},"modified":"2013-06-05T10:31:57","modified_gmt":"2013-06-05T08:31:57","slug":"presunto","status":"publish","type":"post","link":"https:\/\/new.jamonlovers.es\/?p=2795","title":{"rendered":"Jamones internacionales &#8211; Presunto"},"content":{"rendered":"<p>Existen tres zonas principales de producci\u00f3n cuya fama y tradici\u00f3n var\u00edan considerablemente:<\/p>\n<h4><strong>Presunto de Chaves<\/strong><\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft\" src=\"http:\/\/www.jamonlovers.es\/wp-content\/uploads\/2013\/06\/presunto-de-chaves.jpg\" alt=\"Presunto de Chaves\" width=\"483\" height=\"322\" \/><\/p>\n<p><strong>Jamon Blanco<\/strong>. Muy cerca de de la frontera gallega, en el norte de Portugal se encuentra la localidad de <strong>Chaves<\/strong>. Este municipio de 20.000 habitantes produce unos curiosos jamones y es famoso, adem\u00e1s por sus ruinas romanas. Su per\u00edodo de curaci\u00f3n natural, maduraci\u00f3n y envejecimiento es de <strong>18 a 24 meses<\/strong>. El jam\u00f3n de Chaves no se cura al estilo espa\u00f1ol, sino a\u00f1adi\u00e9ndole <strong>especias y vino<\/strong>. Posteriormente se <strong>ah\u00fama<\/strong> ligeramente. Por esta raz\u00f3n, este jam\u00f3n tiene un sabor muy peculiar que recuerda a la <a href=\"http:\/\/www.jamonlovers.es\/gastronomia\/la-cecina-un-diamante-por-descubrir-por-agustin-risueno\/\">cecina<\/a>. De producci\u00f3n muy escasa y consumo local.<\/p>\n<h4><strong>Presunto ib\u00e9rico alentejano<\/strong><\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/www.jamonlovers.es\/wp-content\/uploads\/2013\/06\/alentejano.jpg\" alt=\" Presunto ib\u00e9rico alentejano\" width=\"734\" height=\"500\" \/><\/p>\n<p>El cerdo del Alentejo es un <strong>cerdo ib\u00e9rico<\/strong> como el cerdo ib\u00e9rico espa\u00f1ol, aunque de complexi\u00f3n algo menor. El <strong>Alentejo<\/strong> portugu\u00e9s ocupa una extensa franja que abarca las zonas lim\u00edtrofes entre <strong>Huelva, Extremadura y Salamanca<\/strong>. Como sucede en esta parte de Espa\u00f1a, la dehesa, en forma de bosque poco poblado, es el paisaje dominante de la zona y all\u00ed los cerdos ib\u00e9ricos pastan durante la <a href=\"http:\/\/www.jamonlovers.es\/jamon\/la-montanera\/\">montanera<\/a>. Los procesos de curaci\u00f3n del jam\u00f3n son similares, por lo que puede decirse que estamos ante un jam\u00f3n de una calidad muy alta, similar a los productos espa\u00f1oles. Por contra, los jamones del Alentejo no tienen la difusi\u00f3n de la que gozan los jamones espa\u00f1oles de Huelva, Extremadura y Salamanca.<\/p>\n<h4><strong>Jam\u00f3n ib\u00e9rico puro DOP Barrancos<\/strong><\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft\" src=\"http:\/\/www.jamonlovers.es\/\/wp-content\/uploads\/2013\/06\/jamon-DOP-Barrancos.jpg\" alt=\"Jam\u00f3n ib\u00e9rico puro DOP Barrancos\" width=\"398\" height=\"265\" \/>Es un <strong><a href=\"http:\/\/www.jamonlovers.es\">jam\u00f3n ib\u00e9rico<\/a><\/strong>, de la zona del<strong> Alentejo<\/strong>, con <strong>Denominaci\u00f3n de Origen Protegida<\/strong> por la Uni\u00f3n Europea. En concreto, por las condiciones clim\u00e1ticas requeridas para la transformaci\u00f3n y maduraci\u00f3n de los Jamones y Paletas <a href=\"http:\/\/www.agricert.pt\/\" target=\"_blank\" rel=\"noopener\">DOP Barrancos<\/a>, el microclima especial de la regi\u00f3n, el saber hacer de la poblaci\u00f3n y los <strong>m\u00e9todos artesanales<\/strong> seguidos, dan como \u00fanico lugar autorizado de producci\u00f3n el Condado de Barrancos&#8230; que da nombre a la DOP. De corte fino y alargado, estilizado, perfilado o recortado en pico o punta, tal y como est\u00e1 prescrito por el corte tradicional, pudiendo ser recortada la grasa excesiva, conservando siempre la pata y la u\u00f1a para facilitar la identificaci\u00f3n. Su peso no debe ser inferior a 5 Kg.<\/p>\n<p>Es considerado como el mejor jam\u00f3n que se produce en Portugal, sobre todo por dos razones:<\/p>\n<ul>\n<li>\u00a0<strong>La pureza de la raza<\/strong>\u00a0del \u00abcerdo alentejano\u00bb, considerada actualmente una de las razas m\u00e1s puras de Ib\u00e9rico de la Pen\u00ednsula Ib\u00e9rica.<\/li>\n<li><strong>\u00a0La alimentaci\u00f3n de los cerdos<\/strong>\u00a0en sus poco explotadas Dehesas Alentejanas, donde pueden campar a sus anchas.<\/li>\n<\/ul>\n<p>La distribuci\u00f3n de las <a href=\"http:\/\/www.jamonlovers.es\/jamon\/la-dehesa-paraje-de-cria-del-cerdo-iberico\/\">dehesas<\/a> de encinas y alcornoques que condicionan la zona de producci\u00f3n del cerdo de raza alentejana, coincide con el \u00e1rea geogr\u00e1fica de los siguientes Condados de Portugal:<\/p>\n<p>Alter do Chao, Castelo de Vide, Crato, Marvao, Nisa, Portalegre, Avis Mora, Ponte de Sor, Arronches, parte de Campo Maior, parte de Elvas, Fronteira, Monforte, Borba, Estremoz, Sousel, Vila Vi\u00e7osa, Arraiolos, \u00c9vora, Montemor-o-Novo, Portel, Vendas Novas, Viana do Alentejo, Alandroal, Mourao, Redondo, Reguengos de Monsaraz, parte de Alc\u00e1cer do Sal, parte de Grandola, Alvito, Beja, Cuba, M\u00e9rtola, Vidigueira, Barrancos, Moura, Serpa, Aljustrel, Almod\u00f4dovar, Castro Verde, Ferreira do Alentejo, Ourique, parte de Odemira, parte de Santiago de Cac\u00e9m y Sines.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Existen tres zonas principales de producci\u00f3n cuya fama y tradici\u00f3n var\u00edan considerablemente: Presunto de Chaves Jamon Blanco.
