{"id":243,"date":"2013-08-19T14:44:21","date_gmt":"2013-08-19T12:44:21","guid":{"rendered":"http:\/\/www.jamonlovers.es\/?p=243"},"modified":"2013-08-19T14:44:21","modified_gmt":"2013-08-19T12:44:21","slug":"queso-gamoneu","status":"publish","type":"post","link":"https:\/\/new.jamonlovers.es\/?p=243","title":{"rendered":"Queso y queseros de Gamonedo"},"content":{"rendered":"<p>Tambi\u00e9n llamado de <strong>Gamon\u00e9u<\/strong>, este queso es elaborado por pastores que viven en caba\u00f1as de madera ubicadas en las laderas del circo de monta\u00f1as que rodean a los <strong>Lagos de Covadonga<\/strong>.<!--more--> All\u00ed permanecen estos artesanos del queso, sin bajar al llano, entre los meses de marzo\/abril y octubre\/noviembre\u2026 esto es, mientras no hay nieve all\u00e1 arriba.<\/p>\n<p>Estos pastores\/queseros elaboran, de un modo totalmente <strong>artesanal<\/strong>, un queso azul que luego venden a 20 euros el kilo. Similar al <strong>Cabrales<\/strong>, puesto que se emplea una mezcla de <strong>tres tipos de leche<\/strong> (cabra, vaca y oveja), para su elaboraci\u00f3n el <strong>queso de Gamonedo<\/strong> se hace sobre esa combinaci\u00f3n de leches que es mantenida en peyas (odres de cuero). Los <strong>quesos<\/strong> se ah\u00faman ligeramente con el humo proveniente de las <strong>chimeneas de las caba\u00f1as<\/strong>.<\/p>\n<p>Luego, mientras algunos quedan ya para la venta, otros se dejan <strong>madurar en cuevas<\/strong> <strong>naturales<\/strong>, donde hongos de cepas penicillum confieren al queso sus vetas azuladas caracter\u00edsticas.
