Podr\u00eda decirse que es el pariente pobre de los embutidos, sino fuera porque, al final, es uno de lo que m\u00e1s acaba gustando a\u00a0<b>peque\u00f1os\u00a0<\/b>y\u00a0<b>mayores<\/b>. O sea que, pese a que ser\u00e1 dif\u00edcil encontrar una receta de cocina que incluya el salchich\u00f3n entre sus ingredientes, al final el salchich\u00f3n acaba siendo el\u00a0<b>favorito<\/b>\u00a0para comerlo en<b>\u00a0bocata<\/b>\u2026 o simplemente en\u00a0<b>rodajas<\/b>, en un plato.<\/p>\n<p><b>M\u00e1s magro<\/b>\u00a0y\u00a0<b>menos salado<\/b>\u00a0que el resto de miembros de la familia chacinera, el salchich\u00f3n es\u00a0<b>v\u00edctima inocente<\/b>\u00a0de algunas aberraciones que se venden con ese mismo nombre y que, para desgracia del verdadero salchich\u00f3n, han desprestigiado su nombre. Y es que, en sentido amplio, es salchich\u00f3n y se comercializa como tal todo aquel\u00a0<b>picadillo de cerdo aderezado<\/b>\u00a0con especias -fundamentalmente pimienta-, embutido en\u00a0<b>tripa<\/b>\u00a0y curado al\u00a0<b>aire<\/b>. Mellizo del chorizo, pero\u00a0<b>sin<\/b>\u00a0<b>piment\u00f3n<\/b>, ya que es una receta anterior al descubrimiento de\u00a0<b>Am\u00e9rica<\/b>. Nada se dice en todas estas definiciones sobre la calidad del producto\u2026 y por ah\u00ed empieza todo.<\/p>\n<p>&nbsp;<\/p>\n<p>\u00bfDamos un repaso a los distintos tipos de salchich\u00f3n que se hacen en Es como modo, inicial, de aprender a reconocer el que es del que no es?<\/p>\n<p>&nbsp;<\/p>\n<h4><b>Salchich\u00f3n cular<\/b><\/h4>\n<p><a href=\"http:\/\/www.jamonlovers.es\/wp-content\/uploads\/2014\/07\/Salchichon-cular.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-2358\" src=\"http:\/\/www.jamonlovers.es\/wp-content\/uploads\/2014\/07\/Salchichon-cular-300x155.jpg\" alt=\"Salchich\u00f3n cular\" width=\"300\" height=\"155\" \/><\/a><\/p>\n<p>Escuchado este nombre, aparece la primera pregunta \u00bf<b>por qu\u00e9<\/b>\u00a0se llama\u00a0<b>cular<\/b>? Pues no porque sea la zona del culo del cerdo la que se pica para el embutido, sino porque se usa la\u00a0<b>parte final del intestino<\/b>\u00a0-porcino o bovino- para embutir la mezcla.
