En concreto, la investigadora\u00a0 ha recibido su premio por su tesis Estudio de la fracci\u00f3n lip\u00eddica y de los compuestos vol\u00e1tiles producidos en el <b>tejido adiposo subcut\u00e1neo<\/b> durante la <a title=\"Elaboraci\u00f3n del Jam\u00f3n Ib\u00e9rico\" href=\"http:\/\/www.jamonlovers.es\/jamon\/elaboracion-jamon-iberico\/\" target=\"_blank\" rel=\"noopener\">elaboraci\u00f3n del <b>jam\u00f3n ib\u00e9rico<\/b><\/a>.<\/p>\n<p>M\u00f3nica Narv\u00e1ez ha concluido, en su investigaci\u00f3n, que el estudio de la composici\u00f3n qu\u00edmica de la <a title=\"Grasa del jam\u00f3n ib\u00e9rico\" href=\"http:\/\/www.jamonlovers.es\/mundo-cortador\/la-grasa-del-jamon-iberico\/\"><b>grasa<\/b>\u00a0del <b>jam\u00f3n ib\u00e9rico<\/b><\/a> podr\u00eda tener una aplicaci\u00f3n muy interesante: <b>monitorizar<\/b> la <b>curaci\u00f3n<\/b> del jam\u00f3n para obtener jamones homog\u00e9neos. Y no s\u00f3lo eso. Aplicando la t\u00e9cnica desarrollada la doctora sevillana, ser\u00eda posible <b>predecir<\/b> si el proceso de <b>maduraci\u00f3n<\/b> est\u00e1 progresando satisfactoriamente. As\u00ed mismo, se podr\u00eda actuar sobre las variables del sistema para, de esta forma, optimizar la maduraci\u00f3n conociendo con precisi\u00f3n los <b>cambios<\/b> que se producen durante el procesado.<\/p>\n<p>Cuando la <b>doctora Narv\u00e1ez<\/b>, investigadora del <b>CSIC<\/b>, se puso a escribir su tesis, ten\u00eda el objetivo de estudiar los cambios que se producen en las <b>diferentes especies moleculares<\/b> de <b>triglic\u00e9ridos<\/b>, diglic\u00e9ridos, <b>monoglic\u00e9ridos<\/b> y \u00e1cidos grasos totales y libres del tejido adiposo subcut\u00e1neo del jam\u00f3n ib\u00e9rico durante el proceso de curaci\u00f3n. Al acabar, la investigadora ten\u00eda en sus manos un estudio simult\u00e1neo que inclu\u00eda todos los cambios que se produc\u00edan en la <b>grasa subcut\u00e1nea<\/b> que se produc\u00edan durante la curaci\u00f3n\u2026 y que coincid\u00edan, de forma simult\u00e1nea, en\u00a0 los diferentes <b><a href=\"http:\/\/www.jamonlovers.es\">jamones ib\u00e9ricos<\/a><\/b> que la doctora Narv\u00e1ez hab\u00eda utilizado para su estudio.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>El Campus de Excelencia Internacional Agroalimentario ceiA3 convoc\u00f3 el I Premio Internacional a la Mejor Tesis Doctoral y M\u00f3nica Narv\u00e1ez, doctora por la Universidad de Sevilla, se ha hecho con el galard\u00f3n en la categor\u00eda de Tecnolog\u00eda de los Alimentos.
