Y es que, esta sencilla receta con jam\u00f3n ib\u00e9rico, permite utilizar la grasa del jam\u00f3n ib\u00e9rico para hacer una mayonesa que dar\u00e1 un toque distinto y especial a los platos.<\/p>\n<p>&nbsp;<\/p>\n<h4><b>Ingredientes<\/b><\/h4>\n<p>250 gramos de <b>grasa de jam\u00f3n ib\u00e9rico<\/b><\/p>\n<p>150 gramos de <b>aceite de girasol<\/b><\/p>\n<p>200 gramos de <b>aceite de oliva<\/b> 0,4\u00ba<\/p>\n<p>1 <b>huevo<\/b><\/p>\n<p>1\/2 cucharadita de <b>mostaza<\/b> (seg\u00fan gustos)<\/p>\n<p>1 cucharadita de <b>vinagre<\/b> o unas gotitas de zumo de lim\u00f3n<\/p>\n<p>Una pizca de <b>sal<\/b><\/p>\n<p>&nbsp;<\/p>\n<h4><b>Elaboraci\u00f3n<\/b><\/h4>\n<p>Lo primero de todo ser\u00e1 poner en un <b>cazo<\/b> aceite de girasol y 250 gr de grasa de jam\u00f3n ib\u00e9rico\u2026 utilizando, preferiblemente las partes m\u00e1s blancas y jugosas del jam\u00f3n \u2013antes, habr\u00e1 que tomar la precauci\u00f3n de <b>retirar<\/b> las <b>partes amarillentas<\/b>, a fin de evitarnos <b>sabores rancios<\/b> y desagradables.<\/p>\n<p>Cocinando a fuego lento, sin llegar a la ebullici\u00f3n, mantendremos el fuego encendido durante <b>media hora<\/b>, hasta que la grasa s\u00f3lida quede transparente. Lo siguiente que habr\u00e1 que hacer ser\u00e1 colar la grasa resultante con un colador de <b>tamiz fino<\/b>. De este modo, obtendremos un aceite limpio con el que elaborar nuestra <b>mayonesa de jam\u00f3n ib\u00e9rico<\/b>.<\/p>\n<p>A partir de aqu\u00ed se procede del mismo modo que se har\u00eda con una <b>mayonesa normal.<\/b> Es decir, cascando un huevo en un cuenco. \u00c9ste, ir\u00e1 al vaso de la batidora, junto con el vinagre y la sal. Adem\u00e1s, habr\u00e1 que a\u00f1adir 200 gramos de aceite de oliva 0,4\u00ba y unos 50 gramos del aceite de jam\u00f3n ib\u00e9rico que hemos elaborado.<\/p>\n<p>En el momento de batir, el brazo de la <b>batidora<\/b> habr\u00e1 que mantenerlo <b>quieto<\/b>, hasta que el preparado espese. Ser\u00e1 en el momento en el que la batidora tome cuerpo cuando habr\u00e1 que comenzar a hacer <b>movimientos suaves<\/b>, ascendentes y descendentes, hasta que quede una <b>salsa homog\u00e9nea<\/b>.
