Un proyecto de investigacio\u0301n e innovacio\u0301n que se ha presentado a clientes y amigos en Alimentaria hace unos di\u0301as.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"section\">\n<div class=\"layoutArea\">\n<div class=\"column\">\n<p>Deliciosa, intensa, sedosa, jugosa y con muchos matices aroma\u0301ticos es sin duda el resultado de la paciencia, ma\u0301xima calidad y saber hacer de esta familia de Guijuelo, con ma\u0301s de 100 an\u0303os de tradicio\u0301n chacinera.<\/p>\n<div class=\"page\" title=\"Page 1\">\n<div class=\"layoutArea\">\n<div class=\"column\">\n<h4><strong>Caracteri\u0301sticas y origen Chuleta de Bellota FISAN de Maduracio\u0301n Extrema<\/strong><\/h4>\n<p><iframe loading=\"lazy\" title=\"Caracter\u00edsticas y origen Chuleta de Bellota Ib\u00e9rica FISAN de Maduraci\u00f3n Extrema \ud83e\udd69\" width=\"1080\" height=\"608\" src=\"https:\/\/www.youtube.com\/embed\/_WwVstI2PCc?feature=oembed\"  allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe><\/p>\n<p>Tal y como Javier S\u00e1nchez Hern\u00e1ndez (Director Adjunto FISAN) nos comenta, esta chuleta es: 100% natural, sin sal y sin conservantes.<\/p>\n<p>Han conseguido este producto con mucho cari\u00f1o y controlando la temperatura y evoluci\u00f3n durante sus 120 d\u00edas de maduraci\u00f3n.<\/p>\n<p>Javier lo compara a c\u00f3mo se elabora el champagne ya que a mitad de su curaci\u00f3n el chuletero pasa a reposar en horizontal y todos los d\u00edas hay que ir d\u00e1ndole la vuelta para que la maduraci\u00f3n sea homog\u00e9nea y \u00f3ptima.<\/p>\n<p>De sabor intenso y profundo, con toques a jam\u00f3n curado, grasa fluida y que te incita a seguir degust\u00e1ndola son las caracter\u00edsticas que destaca Javier sobre la chuleta de maduraci\u00f3n extrema.<\/p>\n<h4><strong>\u00bfC\u00f3mo surgi\u00f3 la Chuleta de Bellota Madurada?<\/strong><\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-16417 size-large\" src=\"https:\/\/www.jamonlovers.es\/wp-content\/uploads\/2024\/04\/evolucion-chuleta-de-cerdo-de-bellota-iberico-madurada-fisan-jamonlovers-1024x555.jpg\" alt=\"\u00bfC\u00f3mo surgi\u00f3 la Chuleta de Bellota Madurada?\" width=\"1024\" height=\"555\" \/>Desde FISAN se plantearon junto con uno de sus clientes dar largas maduraciones a los productos ib\u00e9ricos. Esto ya es algo que se viene haciendo con el vacuno y decidieron aplicarlo al ib\u00e9rico.<\/p>\n<p>Comenzaron a investigar y decidieron darle rigor cient\u00edfico a las muestras comparando diferentes maduraciones, desde 0, 3, 5 y 8 meses. Finalmente tras analizar los resultados decidieron darle una maduraci\u00f3n extrema de 120 d\u00edas y hacer as\u00ed, un producto distinto, \u00fanico en el mercado.<\/p>\n<h4><strong>Presentaci\u00f3n Chuleta Madurada FISAN Hermanos Torres Alimentaria<\/strong><\/h4>\n<p><iframe loading=\"lazy\" title=\"Showcooking Chuleta Madurada FISAN Hermanos Torres Alimentaria\" width=\"1080\" height=\"608\" src=\"https:\/\/www.youtube.com\/embed\/J7nTJkmXs0c?feature=oembed\"  allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe><\/p>\n<p>Tras presentar el evento Eva S\u00e1nchez Hern\u00e1ndez (Directora de Gesti\u00f3n y Comunicaci\u00f3n FISAN) dio paso a su hermano Javier que nos cont\u00f3 todo el origen de este precioso proyecto.<\/p>\n<p>Sergio de Hermanos Torres, nos habl\u00f3 de la chuleta desde un punto de vista en cuanto a la incorporaci\u00f3n en la Alta Cocina y de lo que les hab\u00eda evocado para cocinarla.<\/p>\n<p>Durante el Show Cooking disfrutamos de la chuleta a trav\u00e9s de dos recetas deliciosas y aut\u00e9nticas: Callos de Chuleta de Cerdo de Bellota Ib\u00e9rico madurada con \u00f1oquis de Chorizo Alta Gastronom\u00eda FISAN y lim\u00f3n encurtido.
