La temperatura y humedad est\u00e1 controlada. Antes de meterlo en salaz\u00f3n se le quita la piel, el callo y los pellejos que pueda tener.<\/p>\n<p>Una vez sale del proceso de salaz\u00f3n se lava y se cuelga en secaderos donde se cura para alcanzar los colores, sabores y aromas que se buscan. Son piezas de 4 a 6 kilos.<\/p>\n<p>La carne presenta una infiltraci\u00f3n que llama mucho la atenci\u00f3n y nos recuerda a la del propio jam\u00f3n o incluso a la de la carne del kobe. En boca es muy sabroso y rico.<\/p>\n<p>Es un producto desarrollado en Conil de la Frontera (Cadiz) por la empresa Petaca Chico junto con \u00c1ngel Le\u00f3n (Aponiente). Seg\u00fan el Chef del Mar es un producto estremecedor que habla de \u00abEspa\u00f1a, de nuestra cultura, de nuestra tradici\u00f3n, de los salazones, del mar, de las almadrabas\u00bb. Se han unido el trabajo de Aponiente de investigaci\u00f3n y el conocimiento de Petaca Chico en el mundo del at\u00fan y de los salazones.<\/p>\n<p>Se corta de forma parecida al jam\u00f3n pero Silvio nos asegura que tiene su propia t\u00e9cnica ya que al ser tan suave, el cuchillo tiene que ir acorde a la textura del producto por lo que requiere de mimo y cuidado.<\/p>\n<p>Cuando lo pruebas desde luego no es un sabor que te deje indiferente \ud83d\ude09<\/p>\n","protected":false},"excerpt":{"rendered":"<p>\u00bfQu\u00e9 es el jam\u00f3n del mar?
