Hoy Roberto Gonz\u00e1lez Santalla nos habla sobre este maravilloso producto y nos muestra uno de los maridajes m\u00e1s sorprendentes. Primero se marina con ajo, piment\u00f3n y sal.<\/p>\n<p>Una vez este proceso ha concluido se procede con el ahumado de las piezas. En La Hoja del Carrasco es muy t\u00edpico el ahumado natural de los embutidos a trav\u00e9s de una chimenea en la que se quema madera de encina. Quedan muy pocas empresas que sigan manteniendo esta tradici\u00f3n tan bonita.<\/p>\n<p>Este sistema de ahumado le aporta un sabor muy peculiar a la papada que hace que nos llame tanto la atenci\u00f3n al acercar a nuestra nariz o meterla en nuestra boca.<\/p>\n<p>La papada una vez ahumada permanecer\u00e1 aproximadamente 6 meses en los secaderos naturales que La Hoja del Carrasco tiene en Guijuelo, donde alcanzar\u00e1 su madurez \u00f3ptima.<\/p>\n<h4><strong>C\u00f3mo se corta la papada<\/strong><\/h4>\n<p>Al ser una pieza con un tama\u00f1o y disposici\u00f3n morfol\u00f3gica como la que presenta, es necesario usar un soporte cecinero para poder cortarla de manera elevada. De esta manera se ensalza el producto de manera visual, se mejora la experiencia de cliente y se fomenta el disfrute a trav\u00e9s de los sentidos.<\/p>\n<p>Adem\u00e1s contribuiremos a la puesta en escena del producto llamando m\u00e1s la atenci\u00f3n de las personas que pudieron deleitarse con ella.<\/p>\n<h4><strong>Armon\u00eda de Papada &amp; Caviar<\/strong><\/h4>\n<p>La Hoja del Carrasco adem\u00e1s nos sorprendi\u00f3 con una propuesta de maridaje con la papada muy interesante. Sobre cada una de las lonchas de esta delicia extendieron un poco de caviar para que la fusi\u00f3n en boca fuera una explosi\u00f3n de sabores. La cremosidad de la grasa de la papada equilibra la salinidad del caviar y el resultado es muy sabroso.
