Fundada por Juan Carlos Caballero, chef y amante de los vinos, el peque\u00f1o milagro gastron\u00f3mico firmado por esta peque\u00f1a empresa ha revolucionando las cocinas de los mejores restaurantes y los anaqueles de las tiendas gourmet. \u00bfY c\u00f3mo la han hecho? Ofreciendo a los paladares m\u00e1s \u00e1vidos de innovaci\u00f3n perlas de l\u00edquido comestibles.<\/p>\n<p>Desde vinos de Jerez y Sanl\u00facar de Barrameda, a moscatel de C\u00e1diz; vinagre de la tierra; Tinto Rioja o Ribera del Duero; o licores varios. En realidad, se pueden hacer perlas de cualquier l\u00edquido. En verdad, lo conseguido en Biogades Food Tech, ha sido perfeccionar y conseguir algo que otros hab\u00edan intentado antes\u2026 s\u00f3lo que, hasta ahora, no se hab\u00eda conseguido mantener las esferas sin que se rompiesen. Adem\u00e1s lo han conseguido desarrollando su propia maquinaria.<\/p>\n<p>A Juan Carlos Caballero, hombre innovador e imaginativo, la idea de hacer perlas de l\u00edquidos le viene a la cabeza en Sicilia, visitando unos de los secaderos de huevas de at\u00fan rojo que existen all\u00ed. All\u00ed ya vio este emprendedor como algunas huevas se romp\u00edan al manipularlas, deduciendo, tambi\u00e9n que ser\u00eda ese un tema que habr\u00eda que resolver. Conseguido este reto, Biogades Food Tech se puso en contacto con el departamento de Tecnolog\u00eda de los Alimentos de la Universidad de C\u00e1diz (UCA). Empresa y Universidad desarrollaron un proyecto conjunto para estudiar la conservaci\u00f3n del caviar de vino. Se trataba de mantener el aspecto original de las esferas de caviar -en tama\u00f1o y textura- pero a\u00f1adiendo todas las propiedades organol\u00e9pticas del vino, para as\u00ed poder utilizarlas en la preparaci\u00f3n de diversos platos.
