{"id":14865,"date":"2022-04-11T11:43:33","date_gmt":"2022-04-11T09:43:33","guid":{"rendered":"https:\/\/www.jamonlovers.es\/?p=14865"},"modified":"2022-04-11T11:43:33","modified_gmt":"2022-04-11T09:43:33","slug":"datos-del-sector-del-jamon-iberico-montanera-2021-2022","status":"publish","type":"post","link":"https:\/\/new.jamonlovers.es\/?p=14865","title":{"rendered":"Se mantiene la producci\u00f3n de cerdos de bellota en la Montanera 2021-2022"},"content":{"rendered":"<h2>Se mantiene la producci\u00f3n de cerdos de bellota en la Montanera 2021-2022<\/h2>\n<p>La Asociaci\u00f3n Interprofesional del Cerdo Ib\u00e9rico (ASICI) ha presentado los resultados de la montanera 2021\/2022 donde se han registrado 682.489 cerdos de bellota, lo que supone un descenso del 0,06% con respecto a los 682.935 animales sacrificados en la montanera anterior.\u00a0 De ellos, 674.557 fueron canales aptas.<\/p>\n<h4>Evoluci\u00f3n sacrificios montanera desde 2014<\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-14911 size-full\" title=\"Evoluci\u00f3n sacrificios montanera desde 2014\" src=\"https:\/\/www.jamonlovers.es\/wp-content\/uploads\/2022\/03\/sacrificios-montanera-cerdos-de-bellota-ibericos-jamonlovers-asici.jpg\" alt=\"Evoluci\u00f3n sacrificios montanera desde 2014\" width=\"895\" height=\"564\" \/><\/p>\n<p>Del total de cerdos sacrificados en la pasada montanera, el 64% corresponden a precinto negro (435.955), bellota 100% ib\u00e9rico, y el 36% a precinto rojo, correspondiendo el 8% a bellota 75% ib\u00e9rico (55.288 animales) y el 28% restante (191.246 animales) a bellota 50% Ib\u00e9rico. Cifras muy similares a la montanera anterior.<\/p>\n<h4>Sacrificios montanera 2021-2022 por tipo racial<\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-14907 size-full\" title=\"Sacrificios montanera 2021-2022 por tipo racial\" src=\"https:\/\/www.jamonlovers.es\/wp-content\/uploads\/2022\/03\/sacrificios-montanera-2021-2022-cerdos-de-bellota-ibericos-jamonlovers.jpg\" alt=\"Sacrificios montanera 2021-2022 por tipo racial\" width=\"895\" height=\"564\" \/><\/p>\n<p>Por comunidades aut\u00f3nomas, en Andaluc\u00eda se han producido el 46% de los animales de bellota de esta campa\u00f1a (313.254 animales), lo que supone un descenso de los cerdos engordados del 2,07% con respecto a la campa\u00f1a anterior; en Extremadura se engordaron el 37% (254.818 animales), que supone un incremento del 6% respecto a los animales del periodo 2020\/2021; en Castilla y Le\u00f3n se produjo el 8% de los animales de esta montanera (54.991 animales), que arroja un incremento del 4%. La producci\u00f3n en dehesas de Portugal ha sido de 39.675 animales de bellota, que corresponde a un 6% del total de animales y supone un descenso del 30,7% con respecto a los animales de la montanera anterior. Por \u00faltimo, en Castilla-La Mancha se han producido 9.112 animales, lo que significa un 6,6% m\u00e1s, y Madrid engord\u00f3 40 animales.<\/p>\n<h4>Evoluci\u00f3n sacrificios Denominaciones de Origen Protegidas<\/h4>\n<p>En cuanto a las producciones de las Denominaciones de Origen Protegidas, en esta montanera se han sacrificado 116.437 animales correspondiendo el 34% a Guijuelo, el 25% a Dehesa de Extremadura, el 23% a Jabugo y el 18 % a Los Pedroches.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-14909 size-full\" title=\"Evoluci\u00f3n sacrificios Denominaciones de Origen Protegidas Montanera 21-22\" src=\"https:\/\/www.jamonlovers.es\/wp-content\/uploads\/2022\/03\/sacrificios-cerdos-bellota-dop-evolucion-calidad-diferenciada-espan\u0303a-jamonlovers.jpg\" alt=\"Evoluci\u00f3n sacrificios Denominaciones de Origen Protegidas Montanera 21-22\" width=\"895\" height=\"585\" \/><\/p>\n<h4>Evoluci\u00f3n precintos desde 2014 hasta 2021<\/h4>\n<p>Hasta el 1 de marzo, los jamones de bellota 100% ib\u00e9ricos suponen el 11,84%, los de bellota ib\u00e9ricos el 6,89%, los de cebo de campo el 15,71% y los de cebo el 65,56%.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-14913 size-full\" title=\"Evoluci\u00f3n precintos jam\u00f3n ib\u00e9rico desde 2014 hasta 2021\" src=\"https:\/\/www.jamonlovers.es\/wp-content\/uploads\/2022\/03\/evolucion-precintos-jamon-iberico-2014-2021-jamonlovers-asici.jpg\" alt=\"Evoluci\u00f3n precintos jam\u00f3n ib\u00e9rico desde 2014 hasta 2021\" width=\"895\" height=\"666\" \/><\/p>\n<h4>Situaci\u00f3n en el sector del Ib\u00e9rico<\/h4>\n<p>El presidente de ASICI, Antonio Prieto, ha subrayado que \u201cson datos positivos que demuestran estabilidad y destacan, una vez m\u00e1s, la solidez y constancia de un sector que contin\u00faa demostrando su capacidad de adaptaci\u00f3n frente a las dif\u00edciles coyunturas actuales del mercado\u201d.
