Todas sus propiedades sensoriales afloran ofreci\u00e9ndonos una experiencia mucho m\u00e1s completa.<\/p>\n<p>Hemos querido comprobar emp\u00edricamente qu\u00e9 le sucede al jam\u00f3n cuando est\u00e1 fr\u00edo, caliente o atemperado&#8230; \u00bfquer\u00e9is verlo?<\/p>\n<h4>La temperatura y el jam\u00f3n<\/h4>\n<p><iframe loading=\"lazy\" title=\"\u00bfA qu\u00e9 temperatura hay que consumir el jam\u00f3n?\" width=\"1080\" height=\"608\" src=\"https:\/\/www.youtube.com\/embed\/Fg6wvGsoqj8?feature=oembed\"  allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe><\/p>\n<p>Primero comparamos el sobre de jam\u00f3n fr\u00edo con el atemperado. El fr\u00edo estaba a 8.1 \u00b0C y el atemperado a 20.2\u00b0C.<\/p>\n<p>Para empezar el fr\u00edo no desprend\u00eda casi aromas cuando lo abrimos, mientras que el que estaba a temperatura ambiente, inund\u00f3 de aromas la sala en la que est\u00e1bamos nada m\u00e1s abrirlo.<\/p>\n<p>Por otro lado con el jam\u00f3n fr\u00edo es muy complicado coger las lonchas ya que se rompen. Con el atemperado las lonchas de desprenden con una facilidad pasmosa.<\/p>\n<h4>Catamos jam\u00f3n fr\u00edo, jam\u00f3n calentado y jam\u00f3n atemperado<\/h4>\n<p>8.1 \u00b0C el jam\u00f3n fr\u00edo, 41.8 \u00b0C el jam\u00f3n caliente y 20.2\u00b0C el jam\u00f3n a temperatura ambiente.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-14262 size-large\" src=\"https:\/\/www.jamonlovers.es\/wp-content\/uploads\/2020\/12\/temperatura-jamon-cliente-jamonlovers-1024x573.jpg\" alt=\"Temperatura jam\u00f3n\" width=\"1024\" height=\"573\" \/><\/p>\n<p>El fr\u00edo adem\u00e1s de no tener brillo, tiene la grasa compacta y esto har\u00e1 que no funda en boca y perdamos parte de los sabores y aromas caracter\u00edsticos del jam\u00f3n. Pasar\u00e1 por nuestro est\u00f3mago sin dejar huella.<\/p>\n<p>Por otro lado al no haberse desarrollado las propiedades de la grasa por el fr\u00edo, puede que el punto de salinidad suba un poco y percibamos que est\u00e1 algo m\u00e1s salado de lo normal.<\/p>\n<p>El caliente nos recordaba a un crujiente a al t\u00edpico jam\u00f3n frito a la vista y al olfato. Al sobrepasar con creces la temperatura a la que se funde la grasa (30 \u00b0C), esta var\u00eda su estructura y hace que tanto aromas como sabores, se deformen. La percepci\u00f3n de sal es alt\u00edsima en boca.<\/p>\n<p>Con el atemperado nada m\u00e1s meterlo en nuestra boca nos provoca una sensaci\u00f3n suave que junto con nuestro propio calor corporal de la boca, hace que la grasa se funda y nos lleguen sabores y aromas m\u00e1s intensos.<\/p>\n<p>El proceso de masticaci\u00f3n junto con el ligero aumento de temperatura a trav\u00e9s de nuestro cuerpo, har\u00e1 que se liberen una serie de compuestos arom\u00e1ticos que nos propiciar\u00e1n sensaciones \u00fanicas.
