Normalmente en casa no se cuentan con herramientas adecuadas para cortar jam\u00f3n y es complicado sacarle el m\u00e1ximo rendimiento a la pieza.<\/p>\n<h4>\u00bfQu\u00e9 diferencia hay a la hora de cortar un jam\u00f3n u otro?<\/h4>\n<p>Cada jam\u00f3n es un mundo donde podemos encontrarnos texturas completamente diferentes y eso va a afectar a la hora de cortarlo.<\/p>\n<p>Independientemente de la alimentaci\u00f3n y gen\u00e9tica de la que provenga cada jam\u00f3n, \u00c1lvaro opina que el proceso de elaboraci\u00f3n es determinante. Es muy importante respetar los tiempos de elaboraci\u00f3n, las temperaturas y humedades&#8230; no tratar de sacar un producto r\u00e1pido al mercado.<\/p>\n<p>Es fundamental que la curaci\u00f3n en la pieza sea homog\u00e9nea para facilitar su corte.<\/p>\n<h4>\u00bfQu\u00e9 es importante a la hora de elegir un jam\u00f3n?<\/h4>\n<p>Es recomendable fijarse en la cara interna del jam\u00f3n y ver que no tenga excesivas acanaladuras, puede tener alguna arruga que otra, pero no dar la sensaci\u00f3n de que est\u00e9 excesivamente seco. Si es as\u00ed, lo m\u00e1s probable es que nos encontremos con un jam\u00f3n muy duro o con una curaci\u00f3n irregular.<\/p>\n<p>\u00c1lvaro se decanta por los jamones que adem\u00e1s sean estrechos; seg\u00fan \u00e9l, se trabajan mucho mejor y se obtienen platos mejores.<\/p>\n<p>Si nos fijamos en cara del tocino, en la parte de la punta, podr\u00e1 darnos pistas sobre el tocino subcut\u00e1neo que encontraremos en la pieza una vez la abramos.<\/p>\n<p>El color del tocino debe ser amarillo m\u00e1s tirando a oro, pero no anaranjado.
