Es un jam\u00f3n que llama mucho la atenci\u00f3n por el veteado que presenta y por la curaci\u00f3n homog\u00e9nea en toda la pieza.<\/p>\n<p>Tiene un equilibrio entre infiltraci\u00f3n y grasa de cobertura. Seg\u00fan nos cuenta \u00c1lvaro, en la zona de la Mancha el cliente no est\u00e1 acostumbrado a la grasa y hay que ir poco a poco inculc\u00e1ndole la importancia que la grasa tiene en un jam\u00f3n.<\/p>\n<h4>Jam\u00f3n Ib\u00e9rico<\/h4>\n<p>Primero nos muestra dos jamones de la categor\u00eda de cebo de campo, uno Ib\u00e9rico (75% Ib\u00e9rico) DOP Guijuelo y otro 100% Ib\u00e9rico elaborado en la sierra norte de C\u00f3rdoba.<\/p>\n<p>Hablamos de las diferencias en cuanto a raza entre estos dos jamones ya que la alimentaci\u00f3n en ambos es de cebo de campo. Veteado, morfolog\u00eda y color del magro son algunos de los aspectos que los diferencia a simple vista.<\/p>\n<p>Por \u00faltimo nos vamos a la categor\u00eda de bellota&#8230; aqu\u00ed \u00c1lvaro nos habla de un jam\u00f3n de bellota ib\u00e9rico, 75% raza ib\u00e9rica. Tiene muy en cuenta las preferencias de sus clientes y quiere aportarles un jam\u00f3n de la m\u00e1xima calidad en cuanto a la alimentaci\u00f3n (Bellota) pero que a la vista muestre ese aspecto veteado que los clientes demandan.<\/p>\n<p>Como ya comentamos cuando comparamos los dos jamones de cebo de campo que tiene; el 100% Ib\u00e9rico tiene un color m\u00e1s intenso debido a la mioglobina (prote\u00edna del m\u00fasculo) y adem\u00e1s, a simple vista, puede parecer\u00a0 que los m\u00fasculos del jam\u00f3n cruzado con Duroc tienen vetas de grasa m\u00e1s abundantes.
