Sin embargo, el Madrid Fusi\u00f3n 2014 ha cambiado las cosas. El bocadillo ha llegado al trono de la cocina y lo ha hecho de la mano de Juan Casamayor, el chef del restaurante Moltto. El cocinero se ha hecho con el premio al mejor bocata de Madrid Fusi\u00f3n con una creaci\u00f3n de ajos tiernos con habitas con morcilla de cebolla, queso brie gratinado, pluma ib\u00e9rica y r\u00facula. El cocinero, a la hora de desarrollar su receta, ech\u00f3 mano de sus propias ra\u00edces. Oriundo de Valencia, Casamayor ha rememorado en su receta la costumbre del agricultor valenciano de desayunar fuerte y a base de embutidos. Por eso ha querido sacar las verduritas junto a una morcilla y una carne de cerdo tan exquisita como la pluma ib\u00e9rica.<\/p>\n<p>A Casamayor no le fue f\u00e1cil hacerse con el galard\u00f3n. Entre sus contrincantes estuvo el murciano Rodolfo Fern\u00e1ndez, que presentaba su bocadillo de tataki de at\u00fan con mayonesa de wasabi en una botella. Al abrirla, este atildado panecillo liberaba humo perfumado con tomillo y romero. Se llev\u00f3 el tercer premio. Pero no fue s\u00f3lo \u00e9l. El madrile\u00f1o Jos\u00e9 D\u00edaz le complic\u00f3 las cosas a\u00fan m\u00e1s al que, a la postre ser\u00eda, vencedor. Lo hizo con un invento de cordero ib\u00e9rico, pimiento de cristal y sabores de oriente medio.<\/p>\n<p>Bocadillos aparte, Madrid Fusi\u00f3n 2014 tambi\u00e9n ha sido el escenario gastron\u00f3mico por el que han ido pasando las que ser\u00e1n tendencias culinarios del a\u00f1o. \u00bfLas repasamos? La primera de ellas es la explosi\u00f3n de la cocina andina, abanderada por las diversas variedades de ceviche y el pisco, bebida nacional peruana.
